I am so super busy right now with finals. Even without classes, I am still up and coming home at the same time. Crazy. We are both ready for this semester to be over. Then it is up and time to go to Brazil. I can’t wait to feel the sun. It has been a long harsh winter hasn’t it?
I am on a healthy kick right now. We usually eat pretty healthy, but we are just cutting out a few things these next few weeks. I will be posting recipes we are using, and where I got them. This was a good one!

I also made this for two, and we ate all of it. So if you want more, double or triple this recipe.
1 Pineapple cored and diced (we used half)
1/2 c diced red onion (I used half an onion)
1 jalepeno seeded and diced (we didn’t have a jalepeno)
1 large garlic clove, minced
1 orange pepper diced (we didn’t have this either)
1 red pepper diced (I used a half)
Juice from 1 large lime
1/4 C fresh mint leaves minced
Red pepper flakes to taste
1 C Brown rice
Put all above ingredients except rice together in a bowl. I also added chicken. I cooked the chicken with some coconut oil, coconut flakes, lime, honey, chili powder. A few minutes before the rice was done cooking, I added the whole mixture to the chicken to cook slightly.
Delicious and healthy! Taylor licked his bowl clean, an added bonus with a really healthy dinner.
