I found a great deal on this shirt, so I thought I would try at it with “fashion” blogging. I certainly have no idea what I am doing but I put my shirt on and went out and tried it. I also refused to get ready for the shoot, seeing as I don’t get ready a lot I thought it would be more authentic and genuine of me to post. And if I think I’m beautiful with minimal makeup I should be able to take pictures of myself like that right? Also to note, I lost my straightener over Christmas break, and apparently I haven’t missed it that much. My new favorite hair (or lazy hair) is just getting out of bed and brushing it. So there you go!
I really love the “in between” sweater. Even in the spring, I get cold easily, so I love the warm shirts that aren’t too warm, but help keep me warm just enough. So I was lucky enough to find this little shirt yesterday at City Creek. At J Crew. For a whopping $16.
I’M A WRINKLY OLD LADY TODAY
Have you ever wondered what you will look like when you are old? I did tonight. This is what I do when I can’t think of an art project. Who knows if I will even look close to this, I couldn’t quite get all the wrinkles I wanted, and hopefully I will look a little less dead. Too much walking dead for me I guess. But it gave me a laugh, and Taylor quite a scare when he saw me like this. It will be interesting to compare these photos to what I will actually look like when I am old.

I am so super busy right now with finals. Even without classes, I am still up and coming home at the same time. Crazy. We are both ready for this semester to be over. Then it is up and time to go to Brazil. I can’t wait to feel the sun. It has been a long harsh winter hasn’t it?
I am on a healthy kick right now. We usually eat pretty healthy, but we are just cutting out a few things these next few weeks. I will be posting recipes we are using, and where I got them. This was a good one!

I also made this for two, and we ate all of it. So if you want more, double or triple this recipe.
1 Pineapple cored and diced (we used half)
1/2 c diced red onion (I used half an onion)
1 jalepeno seeded and diced (we didn’t have a jalepeno)
1 large garlic clove, minced
1 orange pepper diced (we didn’t have this either)
1 red pepper diced (I used a half)
Juice from 1 large lime
1/4 C fresh mint leaves minced
Red pepper flakes to taste
1 C Brown rice
Put all above ingredients except rice together in a bowl. I also added chicken. I cooked the chicken with some coconut oil, coconut flakes, lime, honey, chili powder. A few minutes before the rice was done cooking, I added the whole mixture to the chicken to cook slightly.
Delicious and healthy! Taylor licked his bowl clean, an added bonus with a really healthy dinner.
PI DAY, AND ALSO IT WAS WARM OUTSIDE.
If there is a time to celebrate math in any way, shape, or form, it is definitely on PI day. Why not use this as an excuse to make some yummy mini pies you have been secretly been wanting to try anyway?
Didn’t take me long to justify making these.
We were invited over by some friends to take in the celebration, and we wholeheartedly agreed to take part in it.
After scoring the internet for recipes, there was no recipe that I could find that included both Blueberries, and Bananas. I was a little shocked that there weren’t, because these are oh so good.
Here is my spin on the Blueberry Banana Cream Pie. I would highly suggest making this. It only took an hour!
Ingredients (4 four inch pies):
Crust
1 1/4 C Flour
1/2 t Salt
1 T Sugar
1/4 C Ice water
1 Stick of unsalted butter, cut into about 8 or 10 pieces. (Keep the butter refrigerated)
Cream
1 C whipping cream
8 oz cream cheese, soft
1/2 t Vanilla extract
1/3 C Sugar
Additional
1-2 Bananas
2 C Blueberries
Directions:
Mix together dry ingredients. Add in butter, and mix well. Slowly add in ice water. The crust should mold together if you press on it. Put it in a ball, and refrigerate for 30 minutes.
Preheat oven to 350. Grease the pans.
Roll out dough until it is about 3mm thick (lets be honest, I just rolled it out so it was thin enough) and then cut out 5 inch circles and mold it into the pie tins.
You might need to trim the excess dough coming out of the tins. Just do what makes sense, and what looks good.
You might also consider putting pie weights down, since you are baking these pies just for the crust.
Bake for 20-25 minutes, or until crust is golden.
Mix whipping cream with a whisk until firm peaks are formed. Remove from bowl, and put cream in fridge.
Whisk cream cheese in the same bowl until light and fluffy. Add sugar and vanilla. Keep mixing until smooth.
Fold in whipped cream into the cream cheese mixture.
Cut Bananas and line at the bottom of the cooled pie crust. Add cream on top, making sure it is smooth. Put lots and lots of blueberries on top (you should probably put as many as you can on there).
Let set in refrigerator for an hour, mine were in there a lot longer and were not soggy in the least bit.

A HAPPY WEEKEND ALL TO OURSELVES
We got away from Provo for the weekend to celebrate my birthday last week. It was a weekend full of spending some good quality time with my Mr. Lund. We ate dinner in the tiny town of Kamas, and stuck out from all the locals. We drove through a peaceful blizzard, and enjoyed the open fields of snow. It was so beautiful. We spent a weekend staying in a 115 year old house that we luckily got all to ourselves. We cuddled and ate our favorite treats all the while watching a few good movie thrillers. Bed & Breakfasts are my cup of tea. It feels like home, and you always get to meet and spend time with the ones who run the place. She was a really sweet lady, and made one fantastic breakfast for us when we woke up….and then shortly later went back to reality in Provo. It sure is fun to get away. Mr. Lund sure knows how to treat me when I am in need of something exactly like this, and I didn’t even ask. That’s love right there folks. (Obama always says folks and it drives me nuts, but somehow I started saying it.) Why does that happen?
IN LOVE WITH GRAPEFRUIT, AND HERES TO EATING HEALTHY
I thought I would finally try a broiled grapefruit. So easy, and I am in love.
This is all you do:
1/2 t Cinnamon
1/4 C Brown sugar
1 T Butter
Melt, and stir it together.
Sprinkle evenly on top of grapefruit, there is enough to use it on two grapefruits. Put it in the oven on broil until the sugar is bubbling.
Now maybe Mr. Lund will like grapefruit. It is a test I am going to try. it is great.
On a healthy note, I have also made the decision to eat a little more healthy. I don’t know if what I am doing is making a huge difference, but it makes me feel better about what I am eating. I am taking MSG out of my diet, as well as always looking at ingredients to become familiar with ingredients to avoid. Of course, we will still eat out occasionally, but at least I can have better stuff in our home.
No more canned soup, ritz crackers (I’ll stick to Kashi), etc. The list goes on. My favorite thing that I still have that has MSG is ranch. I love homemade buttermilk ranch. Only problem is the MSG. So my sister and I are both on a voyage to make it from scratch. That will probably take a while.
I also buy unbleached flour whether it is my all purpose, bread flour, or whole wheat. I want to have my own chickens so I can give them a good home, and also so I know that I am eating good eggs.
Since we are in an apartment now I at least upgraded to cage free. Even Taylor bought those eggs when he went to the store. That made me really happy.
