Hello fellow bloggers! 

Today, I am writing an almost get to know you post.  I m linking up with these lovely blogger friends of mine, and am answering these questions as a get to know you.  

1.  What is the most embarrassing song on your iPod/mp3 player?
// Bahahaa.  I haven’t even used my ipod for two whole years. So everything on there is a little embarrassing.  I know, I know.  I am a little crazy.  I have just found myself loving not being hooked up to music and just enjoying life.  I still turn on Pandora when I am cleaning & I turn on the radio sometimes when I am in the car.  

2.  When was the last time you laughed so hard you cried?
// This is kind of embarrassing, but we watched a movie the other night.  I easily cry, and I held in all my tears during this movie.  I didn’t want to start crying.  Well, the movie ended.  For some reason every time I hold in these tears during a movie, no matter what we talk about after.  I always end up bawling.  So there I was crying while we were talking about basically nothing, all while laughing at my silly self.  ….It’s kind of laughing after I cried so hard, but you get the idea 😀 

3.  What is your perfect Sunday afternoon?
// My perfect Sunday always starts with a nice nap, either in my bed or outside on a blanket. I would include a Summer BBQ, any kind of food as long as it is good. Italian Cream Soda’s would definitely add to the meal. But what would make the most perfect Sunday? Being surrounded by my family & friends. Especially those that I don’t see very often. 

4.  You just won the bazillion dollar jackpot!  What’s the first thing you run out to buy?
// I would run out and by myself a Nikon D800, and a few good lenses! After that, I would probably just build my dream home in the best location. Buy some decent cars, because to be honest, I don’t know how long the ones we currently have will last.  & if I am being really honest, I would probably go on a little shopping spree.  Then I would save, save, save! My husband would probably take us on a super great vacation too! 

5.  What is the craziest thing on your bucket list?
// I have yet to write my bucket list.  That is a good idea. I am not really a super adventurous person, and I don’t really want to go bungee jumping anytime soon, or sky diving for that matter.  I went repelling in Brazil at Iguazu Falls a few weeks ago, that was pretty great!

I was looking through some old pictures, and came across these beauties. Well to be honest, the black & white ones were during a pretty awkward hair growth stage.  But even then, it is fun looking back on what you looked like at various stages in your life.  It makes me want to go raid my parent’s closet so I can have more old pictures with me & my family.  I don’t know what it is about old photos, but they are nostalgic.  I need to put it on my list to get organized and scan all the photos I want from my parent’s.  Has anyone else done that? Any tips? Oh and I want a polaroid camera! Way too fun. 

SUMMER TREATS & BIRTHDAY LOVE

My favorite thing about Summer is the warm weather. Summer dinners always seem just a little more fun.  Our summer favorites include making our very own italian soda’s.  I think Mr. Lund likes it though, because it means as many refills as he wants. We also made my Blueberry Banana Cream Pie recipe for my sister’s Birthday! You can check out the recipe here.
For those interested, all you need to make italian soda is: Club Soda, Half & Half, & we bought Vanilla & Raspberry Torani Syrup.
I love the way my sister celebrates her Birthday.  She celebrates as much as she can ALL month long! Isn’t that a fantastic idea? She cracks me up, because she even started celebrating this year a few days before June even started.  We love her, and were so happy to share this fun day with her on her Birthday.  
We are also very excited for September, when she will have her baby.  As for right now she is a pretty dang cute pregnant mama-to-be.

Creamy Spinach Lime Taquitos

Okay so last week I saw a recipe that put spinach in Taquitos, and if you know me I like to sneak in handfulls of spinach anywhere you can’t tell you will be eating spinach.  The recipe I found looked kind of bland, so I thought about the Honey Lime Enchiladas I love and decided to adapt the recipe from that and make my own version of Taquitos.  They turned out great! Great for leftovers as well. Here is the recipe! 
2 handfuls of Spinach // Minced 
1/4 C Cilantro // Diced
3 Cups of shredded chicken // I just grabbed about 4 breasts to boil. (If you have a blendtec or a Stand mixer it is so easy to shred meat.  With the stand mixer I just put on the paddle attachment and put it on low for a little bit.) 
1/3 C Sour Cream
6 OZ Cream Cheese
1 1/2 C Cheese // We used Colby Jack but I think Cheddar and Mozzarella would be great too.
1-2 Limes 
1-2 Tomatoes // Diced 
1/4 C Onion // Diced
1/4 C Honey
1 T Chili Powder
1 t Cumin
1/2 t Garlic Powder
10-12 Tortillas // I use Tortilla Land (There are no preservatives in them!)
Boil chicken and after cooked // Shred the chicken.  Combine all ingredients together.  I like to add the sour cream and cream cheese last, and than I toss it together.  I add the Colby jack cheese last to the mixture.
Put 2-3 Tablespoons of the mixture into each tortilla. If you think you need a little more cheese, feel free to put a little on top of the mixture as well. Wrap it up tightly, and put seam side down.
Bake in the oven at 425 for about 15 minutes (until the tortillas are golden)
We ate the taquitos with some quick guacamole and I also like to add some Buttermilk Ranch in the mix, but I eat that with everything.
Keep in mind that I wasn’t measuring when I made these, so if it sound like too much lime, no need to put that much in ( I love lime).  I also would probably put in the Cream cheese and Sour cream in half portions first, to see if you need more than that.  I like it to be creamy, but you don’t want it to have too much liquid either.

RIO

One of the reasons I love Brazil is because I love the contrast between these new modern buildings next to these worn down ones.  It is beautiful.
We were so lucky! Our hotel was right on the Copacabana beach.  We also ran into Chuck Liddell and his family.  They were staying at our hotel.  I felt like a creeper taking photos of them, so instead we talked with them like we didn’t know he was famous. For those who don’t know, he is famous for his UFC fighting.
Flavellas.  It is really hard to get a good picture of these.  They are everywhere though! They will take over mountains and I saw so many whenever we would be driving on the freeway. There is something fascinating about them, but it is also a very sad place to be.  We did not go near them because they are very dangerous. Right now Rio police is going into the Flavellas to throw the drug lords into prison.  Some of the children’s lives that live here is really sad.
Make sure you eat here if you come to Rio.  It is one of the oldest restaurants, and all the famous people like the Queen of England would come eat here when they would visit.
We tried a passion fruit tart! So good.  Also Papaya fruit is really gross. Who would have known?

Taylor looks like a natural model whenever I am not pointing the camera his way.  Luckily I was able to sneak this one.  Once he knows I am taking a picture there is no way I could get a picture like this. He is a handsome one. I am so lucky. Oh and I love coconut water here!

This is one of the families from Taylor’s first area of his mission we were able to spend a few days with.  They are so fun, and are some of the kindest and giving people
Taylor had been wanting the whole time we were here to dance to Samba.  It is some pretty fun music. A band ended up playing on our train ride down from the amazing christ statue, and Taylor made me get up and dance…yes he has to talk me into these kinds of things.  We ended up having a lot of fun though!
We had such a great time here in Rio.  It was fantastic just being able to walk along the beach, and seeing the Christ statue is quite amazing. One of the funniest things when we go on a trip, is that people cannot take a picture of us that is even remotely showing where we are.  We often look for someone with a nice camera, or an Asian.  Asian’s really do know how to take photos.  So far this has given us a lot better photos.  
We loved our time in Brazil, and I really cannot believe it was over so fast! I am so glad Taylor planned  this trip so I could meet the culture and people that is so close to his heart.  The culture of Brazil is really great. Everyone is just genuinely nice, warm, and willing to help.  I absolutely loved it! 
I am already missing the great Acai…..

HOW DOES A PRIVATE BEACH SOUND?

This was our view from the hotel! I absolutely loved it! 

For those of you who haven’t yet enjoyed going on a trip with Taylor this will be good to note. This is what Taylor looks like when I know we are about to go on an adventure. It’s his adventure face. It is pretty much constant throughout any vacation, even if we are on a cruise. Taylor brings out the little kid in me, and I adore that about him.  He truly is a little kid at heart and I think that’s part of the reason I love him so much. This was his look as we started to embark on our journey to follow the beach shore wherever it took us. Taylor also thought it would be awesome if we just walked from beach to beach. Little did we know that they all don’t quite connect. We walked a very far distance, and soon it was clear we had to get in the water to keep going. We were waist deep in water passing fisher’s and they were probably wondering who these tourists were just wading through their fishing territory. We then couldn’t follow the beach any longer and found an exit to the city. We escaped by going through someones backyard as they were picking fruit from their tree. What an adventure it was! 


This is one of those places I dream about. I had no idea there were beaches like this. I guess they reserved this beach solely for us, because they knew we would love it.  It was perfect.  Just me and the hubs on this beach by ourselves.  We considered ourselves very lucky.  Taylor brought his adventurous self and we hiked a trail up to a rock to see a pretty great view of the beach below us. 


We also ate at a really good steakhouse in Brazil.  This is a picture of their oven.  It was really cool to see them cooking, and wow was it a good dinner! They also don’t have lemons here, but they sure do know how to make a mean limeade. We ate as much as we could while we were here, and I certainly was not trying to look good at the beach.  I think we probably gained 10 pounds while we were here.

This was a pizza place near our hotel.  Best pizza I have had in a long time.  I wish I had brought my camera the first night we were here because we had a lot more. We came back a second time to get this little mini pizza for an appetizer.  It was delish! I am weak for good food and sweet cafe’s on the street.
